জিরা গুঁড়ার ব্যবহার

জিরা (Cumin) গুঁড়া ছাড়া বাঙালির রান্না যেনো অসম্পূর্ণ থেকে যায়। পার্সলে গোত্রের বিরুৎজাতীয় এক উদ্ভিদ Cuminum cyminum এর শুকনো বীজ হচ্ছে আমাদের বহুল ব্যবহৃত এই জিরা। বহুকাল আগে থেকেই রান্না এবং কিছু ঔষধি ক্ষেত্রে ব্যবহৃত হয়ে আসছে এই মসলাটি।

খাস ফুড জিরা গুঁড়ার গুণগত মান

১। গুঁড়া করার জন্য ব্যবহৃত জিরা আমাদের দেশের বিভিন্ন জায়গা থেকে সংগ্রহ করা হয়। নিজেরা সংগ্রহ করা হয় বলে এর গুণগত মান নিয়ে কোন প্রকার সন্দেহের অবকাশ থাকে না। ২। সম্পূর্ণ নিজস্ব তত্ত্বাবধানে পরিষ্কার করে শুকানো হয়। এরপর ভাঙানো হয়। ৩। রঙ সহ বিভিন্ন প্রকার কমদামি উপকরণের মিশ্রণ থেকে সম্পূর্ণ নিরাপদ। ৪। বাজারের খোলা পণ্যে অনেক ক্ষেত্রেই মৌরি গুঁড়া মিশ্রিত করে গুঁড়ার পরিমাণ বৃদ্ধি করা হয়। সাথে ধূলাবালি তো রয়েছেই। ফলে এর গুণগত মান তখন বিঘ্নিত হয়। কিন্তু খাস ফুডের জিরা গুঁড়ায় এসব কিছু মেশানো হয় না। বরং খাঁটি জিরা ভাঙিয়ে প্রস্তুত করা হয়। ৫। এই জিরা গুঁড়া  (Bangladesh Standard and Testing Institution) অনুমোদিত।
